San Miguel OktoberFest has kicked-off but if you can't jump around and party..celebrate and drink your best beer in your home with these best combination of grilled pork belly & cucumber salad...the ingredients for GRILLED PORK BELLY - 1 kilogram pork belly “liempo”, 2 tablespoons finely chopped garlic and ginger, ½ cup vinegar and 1 tablespoon of soy sauce, 1 tablespoon cracked black peppercorns, ½ tablespoon brown sugar, 1 lemon, 1 tablespoon oyster sauce, while for CUCUMBER SALAD - 1 large cucumber, peeled and sliced according to your preference,1 small red onion, peeled and sliced thinly, ½ cup vinegar, 2 ½ tablespoons honey (optional), Salt and pepper to's how

for GRILLED PORK BELLY - Marinate pork belly in a mixture of vinegar, soy sauce, oyster sauce, lemon, sugar, garlic and ginger and peppercorn for 2 to 3 hours.  Grill the pork belly while basting with the same marinate sauce until cook.  Serve with CUCUMBER SALAD - combine the vinegar, honey, and salt and pepper in a small bowl. Meanwhile, set cucumber, red onion Tips: soak red onion in cold water for 10 minutes to remove strong taste and odor., in a bowl.   Drizzle and toss with the vinaigrette. Garnish with hard boiled eggs (optional).
